The easiest method of all is to grill your fish on a plank. A plank is simply a slab of wood, usually cedar, but sometimes oak, maple, cherry or apple. After soaking the plank for a couple of hours, simply brush the top with oil, lay it on the hot grill grate and place the fish on top. Heat grill pan over medium-high heat.

- Wash the tilapia fish with vinegar.
- Add seasonings, spices and olive oil. Add then and mix well to the fish. Squeeze your orange and add. Allow to marinate for 30 minutes.

Place into grill pan, butter-side down. However, when grilling a flaky white fish, I recommend using a fish-specific grilling piece or separating the fish from the grill on a piece of aluminum foil. Otherwise, the fish will break apart and fall into your grill. Rinse the fish and lay it onto paper towels. Use the paper towels to pat the fish dry and place the fillets on a wire rack (a baking or cooling rack placed inside of a baking sheet works great to catch any drips and spills).
